Major cardiovascular events like heart attack and strokes have a number of factors which combine to block blood vessels.
First there is the narrowing and stiffening of the blood vessels.
But the second factor is related to the blood itself.
The blood can be thicker or thinner. It can clot quickly or slowly.
Proteins and platelets in the blood change how likely someone is to have a heart attack or stroke — because they change how freely the blood flows.
You’re probably aware that aspirin can help to improve your blood flow.
But many other things affect the way blood flows.
One of the major constituents of chocolate has numerous effects improving blood flow.
Effects which could lower the risk of cardiovascular events.
The human study was done at RMIT University in Melbourne Australia. The results were published in the European Journal of Clinical Nutrition.
Stearic acid is a saturated fat abundant in chocolate.
Much has been said about the health effects of saturated fats over the years, as I’m sure you’re aware.
And much of what has been said about saturated fats is based on bad theories.
Let’s take a look at a high quality human study on saturated fat and cardiovascular risk.
This research recruited 13 healthy men.
The men took part in two dietary experiments.
Each experiment lasted for four weeks.
There was a seven-week gap between the two experiments.
“Thirteen free-living healthy males consumed two experimental diets for 4 weeks with a 7 week washout between the two dietary periods.”
The experiments consisted of two similar diets eaten over the month-long period.
The diets were both 30% fat. But the type of fat contained in each diet was slightly different.
Both diets used a type of saturated fat.
One diet used palmitic acid — which is a common food additive.
The other diet swapped palmitic acid out for stearic acid — found in chocolate.
“The diets consisted of 30% of energy as fat providing 6.6% of energy as stearic acid or 7.8% of energy as palmitic acid.”
The men had blood tests taken on the first and last day of each experiment.
These tests were analyzed to see if there were any changes in blood viscosity. To see how thick/thin the blood was.
The experiment was designed to see whether changing the type of fat could increase or decrease the risk of a clot causing a stroke or heart attack.
Platelets circulate in the blood ready to react to cuts and hemorrhages.
They plug holes in the cardiovascular system.
They form scalps and prevent us from bleeding to death.
But too many platelets increase the risk of internal clots blocking our blood vessels.
Platelets were decreased in the experiment where the men ate stearic acid — thinning the blood, decreasing the risk of clots.
“Mean platelet volume was significantly decreased on the stearic acid diet.”
Another major factor in blood clotting is a protein called Factor VII.
If platelets are bricks then Factor VII is the cement.
Factor VII makes platelets more likely to stick together and form a clot.
Factor VII was decreased on the stearic acid diet — again reducing the risk of clots, stroke and heart attack.
“Coagulation Factor VII was significantly decreased on the stearic acid diet.”
Both of these blood parameters were increased on the other diet — so some fats can increase the likelihood of cardiovascular events.
Stearic acid — the major component of cacao fat (found in dark chocolate) decreased cardiovascular risk.
“Results from this study indicate that stearic acid (19g a day) in the diet has beneficial effects on thrombogenic and atherogenic risk factors in males.”
Numerous other studies have shown the health benefits of dark chocolate on body weight and longevity.
The authors of this study recommended using stearic acid in processed foods to improve health outcomes.
“The food industry might wish to consider the enrichment of foods with stearic acid in place of palmitic acid and trans fatty acids.”
