Limiting this one food can protect you from 100s of diseases
One of the central questions in nutrition revolves around the best source of energy.
Energy comes from either carbohydrate, fat, or protein.
I believe it’s best to get most of your energy from carbohydrates.
But not all carbohydrates are the same.
Sugars are simple carbohydrates found in fruit and dairy.
For most people, they are easy to digest and come in foods with many other nutrients.
Starches and fibers are the other types of carbohydrates.
This is much more work for the human digestive system.
And usually they end up providing sustenance for bacteria which can cause us a lot of harm.
So much so that some researchers are recommending people with inflammatory diseases (that’s most diseases) might do better without them.
I agree.
The human research was carried out at King’s College London. The results were published in the Journal of Immunology.
Ankylosing spondylitis is a disease where the bones in the spine become fused together.
It is a painful and disabling disease.
Ankylosing spondylitis is also closely related to Crohn’s disease — which is characterized by severe inflammation in the gut.
These seemingly very different diseases are unified by the inflammatory signals that cause them.
Now, much of the inflammation which causes the disease actually comes from bacteria produced in the body.
There is always some bacteria in the gut — but when excessive amounts leak into the rest of the body it triggers inflammatory disease.
Researchers have identified one bacteria in particular which seems to cause both Crohn’s disease and ankylosing spondylitis…
Klebsiella pneumoniae.
Klebsiella pneumoniae bacteria live in the gut.
It’s a type of bacteria which produces extremely inflammatory molecules called endotoxin.
“The results of a large number of studies support the idea that an enteropathic pathogen, Klebsiella pneumoniae, is the most likely triggering factor involved in the initiation and development of these diseases.”
The endotoxin produced by bacteria like klebsiella are the cause of not only these two diseases but also obesity, type II diabetes, cardiovascular disease, dementia — almost all of the common chronic diseases.
There are a handful of things which can fuel the growth of these bacteria — or cause them to leak into the rest of the body where they trigger inflammation.
One of these things is eating starch.
“Increased starch consumption could trigger the disease in both Ankylosing spondylitis and Crohn’s disease by enhancing the growth and perpetuation of the Klebsiella microbes in the bowel.”
Starches are similar to sugar in some ways — but they are far more complex and dense molecules.
Starches are much more difficult to break down in the digestive system.
Consequently — this gives bad bacteria a great opportunity to feed themselves and multiply.
When these bacteria multiply they release chemicals which damage the lining of the gut.
Once this happens, their endotoxin leaks into the rest of the body — triggering a cascade of inflammation.
The immune system can become confused.
It sees the endotoxin as a bacterial infection in the blood.
So the immune system creates antibodies against the Klebsiella bacteria.
But it also creates other antibodies which can attack you.
The ongoing inflammation from leaky gut flips the immune system on its head.
The result is inflamed guts and inflamed joints.
“Exposure to increased levels of these microbes will lead to the production of elevated levels of anti-Klebsiella antibodies as well as autoantibodies against cross-reactive self-antigens with resultant pathological lesions in the bowel and joints.”
And simply eating starch could be the cause of these diseases.
“A decrease of starch-containing products in the daily dietary intake could have a beneficial therapeutic effect on disease.”
Starches are very convenient foods — but I think it’s a good idea for most people to decrease their intake.
Instead you could focus on eating more ripe, fresh fruits — and dairy products which are much easier to digest for us — leaving little for disease-causing bugs.
