Can margarine ever be good for you?
The idea that saturated fats cause disease is part of a suite of long-disproven theories…
Theories about the role of cholesterol and saturated fats in cardiovascular and metabolic health.
The theory was that saturated fats from animal products could increase cholesterol…
And that increase in cholesterol led to the buildup of plaques in the cardiovascular system.
It has also been claimed that saturated fats themselves build up in the cardiovascular system – causing disease.
These were pretty bad ideas to begin with – and they’ve been completely disproven over the last few decades.
Nevertheless, the idea that saturated fats cause disease is still a widely held belief by many people and many doctors.
Yet, when researchers at New York University looked at the relationship between dietary habits and lifestyle diseases over the last 200 years…
Their findings yet again disproved the claims about saturated fats.
The truth is that saturated fats are stable, health giving nutrients.
The unstable polyunsaturated fats which come from vegetable oil and fish oils are instead the major cause of modern disease.
The review of human dietary trends in the US was carried out at New York University. The paper was published in Frontiers in Nutrition.
“We reviewed data on the American diet from 1800 to 2019.”
The authors of this study looked at nutritional information available for the US population for a period of 219 years.
“We examined food availability and estimated consumption data from 1800 to 2019 using historical sources from the federal government and additional public data sources.”
It is certainly true that people are eating far more processed and highly processed foods.
“Processed and ultra-processed foods increased from <5 to >60% of foods.”
There are a whole host of food categories which have become a much larger part of the diet over this long time period.
“Large increases occurred for sugar, white and whole wheat flour, rice, poultry, eggs, vegetable oils, dairy products, and fresh vegetables.”
And while childhood mortality and a number of previously common health problems have decreased…
We now have a whole host of modern health problems including metabolic and cardiovascular diseases.
Some claim that saturated fats from animal products are the cause of these diseases…
And that polyunsaturated fats from vegetable oils are good for the heart and metabolism.
But as cardio-metabolic diseases increase we have seen a decrease in saturated fat consumption.
The modern health epidemics are accompanied by an increase in vegetable oil consumption.
“Saturated fats from animal sources declined while polyunsaturated fats from vegetable oils rose.”
A number of other food categories increased over the same time period.
And you really need to look at the biochemical effects of all of these foods in order to know which ones are causing which health problems.

…that the polyunsaturated vegetable oils are the major cause of modern diseases!

It is also true that the decrease in saturated fats from animal products probably plays into our current health woes.
The saturated fats help to catalyze energetic metabolism and buffer against the detrimental effects of vegetable oils in the body.

All of the data contradicts the idea that saturated fats and elevated cholesterol are at the root of modern cardio-metabolic health problems.
Because as these health problems became epidemic we were consuming less saturated fat and more vegetable oil.
