They cause internal inflammation, which contributes to many different chronic diseases.
Let’s take a look today at one of the most PUFA laden foods that most people eat — French fries — and how they contribute to health problems like inflammatory bowel disease (IBS).
What Is Inflammatory Bowel Disease?
Inflammatory bowel disease is a disorder where the bowel is inflamed and causes problems with how the gut functions.
Irritable bowel syndrome (IBS) is a common disorder that affects the large intestine. Signs and symptoms include cramping, abdominal pain, bloating, gas, and diarrhea or constipation, or both. IBS is a chronic condition that you’ll need to manage long term.
It causes problems like constipation, diarrhea, gas, bloating, and cramping.
IBS is very uncomfortable and can also cause problems in social situations, because people who have this condition often have to run to the bathroom.
The Connection Between French Fries and IBS
In this study, the researchers looked at the diets of people with IBS and people who didn’t have IBS. They found that French fry consumption had a strong link to IBS.
This study found fries were consumed by a greater number of people with inflammatory bowel disease, and they also ate more cheese and cookies and drank less 100 percent fruit juice compared to people who did not have inflammatory bowel disease.
I want you to notice that potatoes are NOT in this list, and I would say that it’s more likely the OIL that the french fries are being fried in that is causing the problem.
That oil is almost always loaded with PUFAs — more on that in a few.
The Connection Between French Fries and Early Death
Another interesting (and alarming) study showed that people who consumed French fries just 2 to 3 times a week have an INCREASED risk of mortality.
That’s a fancy way of saying they are more likely to die.
Subgroup analyses indicated that participants who consumed fried potatoes 2–3 times/wk (HR: 1.95; 95% CI: 1.11, 3.41) and ≥3 times/wk (HR: 2.26; 95% CI: 1.15, 4.47) were at an increased risk of mortality.
I don’t know about you, but I don’t think regular consumption of French fries is worth an increased risk of dying.
It’s Not the Potatoes…
In this study, they specifically ruled out potatoes by themselves as a problem.
The consumption of unfried potatoes was not associated with an increased mortality risk.
Which means it’s not potatoes causing the risk…
…It’s the PUFA Oil
Almost all French fries are fried in PUFA oils. These oils are “supposed” to be healthy, but all of my research says they cause MASSIVE amounts of problems, and it’s the first thing that I tell people to stop consuming.
PUFA oil includes:
- Corn oil
- Soy oil
- Corn oil
- Safflower oil
- Fish oil
- Sunflower oil
- Canola oil
PUFAs are linked strongly to internal inflammation, which in turn causes problems like diabetes, IBS, and even Alzeihmer’s.
PUFAS are in all kinds of processed foods, but particularly French fries.
If you really want fries, I recommend that you skin some potatoes, cut them up, season them, and throw them in an air fryer.
It’s much, much safer.
