Scientists have theorized that a high-fat meal can trigger a heart attack in people with atherosclerosis.

Some mechanisms that make this happen have been shown in animals…

And now scientists have shown how a high-fat meal could cause a heart attack in humans.

Researchers carried out this human study at the Medical College of Georgia and published their results in the journal Laboratory Investigation.

The study recruited 10 young men.

None of them were taking any medication and they were all in perfect health, according to laboratory testing.

After an overnight fast, the men arrived at the medical test center.

The researchers gave them a high-fat meal in the form of a milkshake.

The ingredients were ice cream, whipping cream, and milk.

The caloric contents and fat content of the milkshake were calibrated for the body weight of each participant.

A 200 lb man would have gotten 90 g of fat in his milkshake.

The researchers repeated this experimental procedure a week later with the same people.

This time they gave the participants a low-fat meal.

The scientists took blood samples before and after the men ate.

They also performed flow-mediated dilation testing.

Flow-mediated dilation involves using ultrasound waves to investigate what’s going on inside the arteries of the circulatory system.

This procedure tests for endothelial dysfunction.

“The men were subjected to biochemical testing and assessment of endothelial health before and after a single high-fat meal or low-fat meal.”

Four hours after the high-fat meal, there was a significant increase in triglycerides, cholesterol, and free fatty acids.

“Following the high-fat meal – triglyceride, cholesterol, and free fatty acid levels were all significantly increased.”

These are all risks for heart disease and metabolic syndrome.

The ultrasound test of the circulatory system also showed dangerous changes.

“Following the high-fat meal, there was impaired postprandial flow-mediated dilation.”

Flow-mediated dilation measures endothelial health.

Impaired flow-mediated dilation indicates endothelial dysfunction – a major risk factor for heart problems.

The study also showed that the high-fat meal caused changes to red blood cells.

Theoretically, these changes could trigger a heart attack.

“We demonstrate in humans that a single high-fat meal induces pathological changes to red blood cells.”

The changes to red blood cells can start a chain of events that leads to destabilization of plaques – the plaques can then trigger a heart attack.

“The changes in red blood cells can elevate MPO. MPO can enter the blood vessel wall and destabilize vulnerable plaques.”

This is the first time that these mechanisms have been shown in humans.

And it shows that even a single high-fat meal can be a risk – especially for people with atherosclerosis.

“These novel findings may have implications for the short-term risk of high-fat meal consumption in patients with atherosclerosis.”

These increases in risk factors were only seen in the part of the experiment where the men ate a high-fat meal.

The high-carbohydrate (low-fat) meal contained the same amount of calories but did not cause these risky changes.

The low-fat meal consisted of a large bowl of sugar-coated flakes.

This proved to be no problem for the men.

“These findings show how the consumption of high-fat meals may promote destabilization of plaques leading to myocardial infarction (heart attack).”

This type of experiment was previously done in animal models.

Mice given a high-fat diet had the same changes in their blood cells.

Mice fed a high-fat diet also had vascular dysfunction and increased risk of heart attack.

“High-fat feeding in mice induces red blood cell changes, suggesting a link between high-fat meals, red blood cells, and vascular dysfunction.”

They used a lot of fat in this experiment (90g).

It’s probably more than most people eat in a sitting.

But it does prove that high-fat meals are a risk factor and that people might want to limit fat intake to a degree.

We don’t know what the safe level of fat is yet.
